Harvest time: Autumn
Sensory Characteristics: Light amber in color, between yellow and light brown. Floral aroma with light fruity notes. Sweet flavor, with notes reminiscent of the fruit. It tends to have high humidity, which is why its crystallization is slow, eventually leading to fermentation.
Flowering
The medlar is a fruit tree, its flowers are agglomerated at the head of the stems and are white, with numerous stamens.
